Every sense works the same basic way: something physical arrives, a specialised cell turns it into an electrical signal, and the brain does the rest. Ten questions on the machinery, including one famous diagram that was wrong all along.
Five senses is a convenient number, and it comes from Aristotle rather than from anatomy. The body has receptors for balance, for limb position, for temperature and for internal pressure, none of which fit the list. Proprioception alone — knowing where your hands are without looking — does more work in daily life than taste does. This quiz covers the structures behind each sense and the cells that do the converting. It also settles the tongue map, that primary school diagram with sweet at the tip and bitter at the back, which turns out to have been a mistranslation that outlived the study it came from by nearly a century.

Why: The retina is a sheet of light-sensitive cells that converts the image into nerve signals. The image lands on it upside down and the brain turns it the right way up.
Answer: A. Cones
Why: Cones work in bright light and come in three types, each tuned to a different range of wavelengths. Rods are far more numerous and much more sensitive, but see only in shades of grey, which is why colour drains out of everything at dusk.

Why: The cochlea is a fluid-filled spiral lined with hair cells, each responding to a different frequency depending on where along the coil it sits. Humans cannot regrow those hair cells, so damage to them is permanent.

Why: Three fluid-filled loops set at right angles to each other detect rotation of the head in any direction. Spin around and stop, and the fluid keeps moving for a few seconds, which is exactly what dizziness is.

Why: Umami is the savoury taste of glutamate, identified by the Japanese chemist Kikunae Ikeda in 1908 and only widely accepted in the West decades later. Spiciness is not a taste at all — chilli heat is registered by pain and temperature nerves.

Why: All five basic tastes can be detected across the entire tongue, with only slight differences in sensitivity. The familiar tongue map comes from a loose 1940s reading of a German study from 1901, and has been known to be wrong for a very long time.

Why: Each receptor responds to a range of molecules, and it is the combination that identifies a smell, which is how a few hundred receptor types cover an enormous range of odours. Linda Buck and Richard Axel shared the 2004 Nobel Prize in Medicine for working out that system.

Why: Pacinian corpuscles are built like tiny onions, with layers of tissue around a nerve ending, and are large enough to see without a microscope. Merkel cells sit near the surface instead and handle fine detail and steady pressure.

Why: The iris is a ring of muscle that widens or narrows the pupil, the pupil being simply the hole in the middle of it. That hole looks black because almost all the light entering the eye is absorbed inside rather than reflected back out.

Why: Receptors in muscles, tendons and joints continuously report the position and effort of every limb. It is what lets you touch your nose with your eyes closed, and it rarely gets counted among the senses at all.
