Refrigeration is about a century old. Everything before it had to work another way.
Every preservation method attacks the same problem from a different angle: microbes need water, warmth and a hospitable pH, so removing any one of those buys time. Salting and drying take the water. Smoking adds antimicrobial compounds and dries the surface. Pickling makes the environment too acidic. Canning sterilises and then seals. These questions cover the main techniques and the science underneath them — including canning, which was in industrial use for decades before anyone understood why it worked.
